Looking for a simple, tasty meal to make this week? This one-pot chicken meal combines Canadian Greek yogurt, cheese curds, chicken, rice and fresh vegetables in a nutritious, colorful dish. It's quick to prepare in advance for weekday meals, and keeps in the fridge or freezer!

Ingredients

  • For 4 servings
  • 1 cup (200 g) uncooked basmati rice
  • 2 ⅔ cup (400 g) chicken breast, diced
  • 1 cup (160 g) Canadian Greek yogurt
  • 2 cup (400 ml) chicken broth
  • 1 ⅓ cup (240 g) squash, diced
  • 1 ⅓ cup (240 g) carrots, diced
  • 4 cup (160 g) fresh spinach
  • ½ cup (80 g) Canadian cheese curds
  • Salt and pepper, to taste
  • Per serving
  • ¼ cup (50 g) uncooked basmati rice
  • ⅔ cup (100 g) chicken breast, diced
  • 1 tbsp (40 g) Canadian Greek yogurt
  • ½ cup (100 ml) chicken broth
  • ⅓ cup (60 g) squash, diced
  • ⅓ cup (60 g) carrots, diced
  • 1 cup (40 g) fresh spinach
  • 3 tbsp (20 g) Canadian cheese curds
  • Salt and pepper, to taste

Preparation

Preheat the oven to 375 °F (190 °C).

In 4 oven-safe glass containers, layer the uncooked basmati rice, diced chicken, Greek yogurt, and chicken broth. Season with salt and pepper and mix.

Arrange the diced squash, carrots, and fresh spinach on top of the rice and chicken mixture.

Sprinkle evenly with Canadian cheese curds.

Bake in the oven for 30 minutes, or until the chicken is fully cooked and the rice is tender. You can cover the containers with aluminum foil to prevent the cheese from burning.

Serve immediately, or let cool before storing.

Storage: in the refrigerator for up to 3 days or in the freezer for up to 1 month.
