Orange Dream

Ingredients
- 4 eggs
- 1/2 cup (125 mL) sugar
- 2 1/4 cups (560 mL) Milk
- 1 grated zest of orange
- 1/2 tsp (2 mL) vanilla extract
- Fresh Fruit Sauce
- 2 tbsp (30 mL) sugar
- 1/4 cup (60 mL) water
- Juice of lemon
- 2 oranges
- 2 tsp (10 mL) cornstarch
- Orange segments
- Fresh mint sprigs

Preparation
Preheat oven to 300 °F (150 °C).
Lightly oil a shallow baking mold (4 cup/1 L) or individual baking cups (4 oz/125 mL).
Beat eggs lightly; gradually whisk in sugar. Heat milk just below boiling point; slowly stir into egg mixture; add orange rind and vanilla. Pour mixture into prepared pan and set in a large shallow pan in the oven.
Pour hot water into the larger pan to reach halfway up the filled mold or cups.
Bake about 50 min or until a testing toothpick comes out clean. Chill thoroughly.
Meanwhile, make sauce by combining sugar and water in a small saucepan. Bring to a boil; simmer for 2 min. Blend cornstarch with fruit juices; stir into syrup. Bring to a boil, stirring constantly; cook until lightly thickened. Cool and chill.
To serve, unmold dessert onto a cold plate; serve with fruit sauce, fresh orange segments and fresh mint sprigs.
