Ingredients

  • 1 1/2 lbs (675 g) lean pork
  • Soy Marinade
  • 1/4 cup (60 mL) oil
  • 1/4 cup (60 mL) soy sauce
  • 2 tbsp (30 mL) lemon juice
  • 1 tsp (5 mL) sugar
  • Pineapple Peanut Sauce
  • 1/2 cup (125 mL) shredded coconut
  • 1 cup (250 mL) hot Milk
  • 2 tbsp (30 mL) butter
  • 1 onion chopped
  • 1 garlic clove minced
  • 1 tsp (5 mL) curry powder
  • 1/2 tsp (2 mL) dried ginger
  • 1/2 cup (125 mL) canned pineapple drained and chopped finely
  • 1/4 cup (60 mL) crunchy peanut butter

Preparation

Slice pork in thin strips or cubes; toss with soy marinade; let stand one hour or more.

Pour milk over coconut; let stand 15 min.

Pineapple Peanut Sauce

Heat butter in a saucepan, add onion and garlic; cook until softened. Stir in curry powder and ginger. Add milk and coconut, pineapple and peanut butter; cook, stirring constantly, until thickened.

Pork

Thread pork on small skewers. Barbecue or broil until well-browned and cooked (approx. 5 min). Serve with warm Pineapple Peanut Sauce.
