Pasta with Mushroom and Pork Strips

Ingredients
- 3 tbsp (45 mL) butter
- 1 lb (450 g) pork tenderloins thinly sliced
- 8 oz (250 g) mushrooms quartered
- Salt and pepper to taste
- 4 cups (1 L) beef broth
- 1 cup (250 mL) water
- 8 oz (250 g) pasta (penne, rotini, shells, etc)
- 1/2 tsp (2 mL) nutmeg
- 1 garlic clove finely chopped
- 1/4 cup (60 mL) cream 35 %
- 3 tbsp (45 mL) grated Canadian Parmesan
- 2 tbsp (30 mL) chopped fresh parsley
- 1/2 tsp (2 mL) paprika

Preparation
Melt butter in skillet and brown pork strips and mushrooms for 2 to 3 minutes, until tender. Season with salt and pepper. Add beef broth and water and bring to a boil; add pasta. Add nutmeg and garlic, stir well.
Cook for 15 to 20 minutes, stirring constantly. Add cream and Canadian Parmesan for 2 to 3 minutes before cooking is completed. Sprinkle with parsley and paprika.
