Pastistio
Layers of pasta, tomato sauce and ground meat are topped with Canadian Provolone cheese and béchamel sauce to make this family-friendly Greek pastistio. Serve it as a main course with a salad for a full meal.

Ingredients
- 2 tbsp (30 mL) butter
- 1 large onion chopped
- 1 lb (450 g) ground lamb or ground beef
- 1 clove garlic crushed
- Salt and freshly ground pepper to taste
- 1/2 tsp (2.5 mL) oregano
- 6 cups (1.5 L) cooked macaroni
- 2 cups (500 mL) tomato sauce
- 7 oz (200 g) sliced Sharp Canadian Provolone cheese
- 2 cups (500 mL) béchamel sauce
- 7 oz (200 g) sliced Mild Canadian Provolone cheese

Preparation
In a sauté pan, melt butter and sauté onions over medium heat until tender. Add ground meat and cook over high heat until almost done. Use a wooden spoon to break up and stir. Add garlic and seasonings and cook until well done. Remove from heat and let it cool.
In a well-buttered gratin dish, about 12 in (30 cm) in diameter, spread a little tomato sauce, then top with 3 cups cooked macaroni.
Top with cooked meat, then with the rest of tomato sauce. Cover with slices of sharp Canadian Provolone cheese and press down. Add the rest of the macaroni and cover with béchamel sauce. Press and smooth down surface. Top with mild Canadian Provolone cheese.
Place immediately in oven preheated to 350 °F (180 °C) and bake 40 minutes until surface is golden brown. Let stand 10 minutes before serving.
