Pizza Toast
Who doesn't love making their own homemade ''pizzas''? Try our easy Pizza Toast recipe. The best part is, it's really quick to make. All you need are some Canadian cheeses, ripe tomatoes and some fresh herbs to create a mouthwatering pizza that everyone will love. You can enjoy it as a quick weekday meal alongside a salad, or slice it up into bite-sized pieces for an amazing and easy appetizer to share with your loved ones. So, what are you waiting for? Ingredients
- 2 thick slices of sourdough bread
- 2 tbsp (30 ml) unsalted Canadian butter
- 1 cup (110 g) Canadian mozzarella cheese
- 1/2 cup (60 g) grated Canadian parmesan cheese
- 1/4 cup (60 ml) marinara sauce, warm
- 2 fresh basil leaves, for garnish
- A drizzle of truffle oil (optional)
- Tomato marinade:
- 1 ripe tomato
- 2 tablespoons (30 ml) extra-virgin olive oil
- 3 tablespoons (45 ml) balsamic vinegar

Preparation
Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
Tomato marinade
Cut a ripe tomato into cubes and marinate the cubes in a shallow dish with olive oil and balsamic vinegar for a few minutes.
Pizza Toast
Butter the bread on both sides.
In a hot frying pan, toast the bread for about two minutes on each side, until crisp and golden.
Once the bread is toasted, lower the heat to medium-low and add 2 slices of mozzarella on each slice of bread.
Cover and cook over low heat until the mozzarella starts to melt.
Once the mozzarella has melted slightly, add the marinara sauce (tomato sauce) on top.
Arrange the diced, marinated tomatoes on top. (Leave the oil and balsamic mix out).
Add grated Parmesan and broil in the oven for a few minutes.
Garnish with fresh basil and a drizzle of truffle oil. Enjoy !
