Potato and Ham Omelet
This is the Potato and Ham Omelet recipe.

Ingredients
- 2 potatoes peeled and sliced
- 3 tbsp (45 mL) Canadian butter
- 1 zucchini sliced
- 4 green onions chopped
- 1 red bell pepper trimmed and minced
- 8 oz (240 g) smoked ham sliced and minced
- Salt and pepper to taste
- A pinch of paprika
- A pinch of ground cumin
- 8 eggs beaten
- 1/2 cup (125 mL) grated Canadian Mozzarella cheese
- 1/2 cup (125 mL) grated Canadian Emmental cheese

Preparation
In a saucepan of boiling water, cook potatoes for 7 minutes or until cooked. Drain well. In large non-stick skillet, sauté potato slices, zucchini, green onion, red pepper and ham in butter for 3 minutes while stirring. Season to taste with salt, pepper, paprika and cumin. Reduce heat to medium and stir gently.
Stir in half the beaten eggs. Top with half the Canadian Mozzarella and half the Canadian Emmental cheese. Add remaining eggs and top with remaining cheese. Reduce heat, cover skillet halfway and cook without stirring until eggs are well done. Place skillet under the broiler and grill omelette for 1 to 2 minutes while checking.
Serve immediately with homemade ketchup.
