Quick and Tasty Beef Quesadillas

Ingredients
- 1 tbsp (15 mL) vegetable oil
- 12 oz (375 g) sirloin steak cut in strips
- 2 garlic cloves minced
- 1 tbsp (15 mL) chili powder
- 1 tsp (5 mL) ground cumin
- 1 tsp (5 mL) ground coriander
- 3 tbsp (45 mL) all-purpose flour
- 1 cup (250 mL) Milk
- 1 1/4 cups (310 mL) Canadian Monterey Jack or Canadian Old Cheddar shredded
- Salt and pepper to taste
- 8 small flour tortillas
- 2 large plum tomatoes sliced

Preparation
Preheat oven to 450 ºF (220 ºC).
In large non-stick skillet, heat oil over high heat; cook sirloin strips, garlic, chili powder, cumin and coriander, stirring for 3 min or just until browned.
Whisk flour into milk until smooth; stir into skillet. Reduce heat and simmer, stirring, until liquid is bubbling and thickened, 5 min. Remove from heat. Stir in 3/4 cup (180 mL) of the Canadian Monterey Jack or Cheddar until melted. Season to taste with salt and pepper. Spread one-eighth of the beef mixture on half of each tortilla; top with tomato slices and remaining Canadian Monterey Jack or old Cheddar cheese. Fold over tortillas into a half-moon shape. Place on large baking sheet. Bake for 5 min or until filling is hot and tortilla is crispy. Cut into wedges.
Tips
This recipe can be doubled to make more quesadillas - perfect for a party.
For the Adventurous: Add 1 jalapeno pepper, minced with beef or use Canadian jalapeno-flavoured Monterey Jack cheese for extra kick. Add thin slices of avocado sprinkled with lime juice along with tomatoes.
