Quick Mac 'n' Cheese (Cooking Club Size)
This is the Quick Mac 'n' Cheese (Cooking Club Size) recipe.

- 3 lbs (1.35 Kg) macaroni or other short pasta
- 9 eggs
- 1 cup (250 mL) ketchup
- Pepper to taste
- 7 cups (1.75 L) shredded Canadian Mild Cheddar cheese
- Additional shredded Canadian Milk Cheddar cheese

In a large saucepan, cook pasta according to directions on package about 10 min.
While pasta cooks, break eggs into a very large bowl. Whisk until smooth. Whisk in ketchup, salt and pepper. Stir in cheese, combining well.
Drain cooked pasta, don't rinse and immediately add to bowl. Toss until cheese melts and sauce is smooth. Alternately, spread into a baking dish, sprinkle with additional cheese and bake at 450 °F (230 °C) until cheese is melted and golden brown, about 10 minutes. If cooking from the refrigerator, increase cooking time accordingly.
Cooking Club Tip:Divide into portions, label with recipe name, date and cooking instructions. Package additional shredded cheese separately. When ready to serve, cover and microwave until heated through. Sprinkle with cheese.
