This is the Saffron Cream of Lettuce Soup recipe.

- 2 cups (500 mL) Milk
- 1 large mild onion
- 2 bay leaves crushed
- Salt and pepper to taste
- 3 onions finely chopped
- 1 garlic clove minced
- 1 tbsp (15 mL) olive oil
- Saffron threads
- 1 green lettuce (any variety) rinsed and chopped
Pour milk in saucepan. Add onion, bay leaves and season to taste with salt and pepper. Boil for 4 minutes while stirring. Remove from heat and let stand 3 minutes. Strain and return liquid to saucepan. Set aside.
In skillet, sauté onions, garlic and saffron in oil for 3 minutes while stirring. Add lettuce. Cover and cook over medium heat for 4 to 5 minutes. Pour into milk mixture. Season to taste.
Purée in food processor. Return cream of lettuce to saucepan and warm for 2 minutes over low heat while stirring. Serve immediately. Garnish each soup bowl with a thread of saffron.
