Shamrock eggs

Shamrock eggs


  • 2 green peppers
  • 2 tbsp (30 g) Canadian butter
  • 4 eggs
  • 1 1/2 cup (150 g) Grated Canadian Cheese: Cheddar, Emmental or Mozzarella
  • Fresh Herbs
  • 1/3 cup (50 g) Canadian Feta Cheese
  • Pepper to taste

Cut your green peppers into 1" (3 cm) thick slices to form a 4-leaf clover-shaped mould. Each pepper yields about 2-3 slices.

Remove seeds and core.

Over medium heat, brown the peppers in a frying pan with butter to soften them slightly, while avoiding breaking them.

Break one egg per bell pepper mould.

Sprinkle the eggs with grated Canadian cheese.

Cover for 5 minutes and cook over low heat.

When the egg is cooked to your liking, remove from the heat and place on the plates.

Sprinkle with herbs and pepper to taste.

Top with feta cheese. Enjoy !
