Shepherd's Pie with Sharp Canadian Cheddar

This is the Shepherd's Pie with Sharp Canadian Cheddar recipe.

Ingredients

  • 3 medium sized celeriac peeled and cubed
  • 2 medium sized yellow-flesh potatoes peeled and cubed
  • 1 bunch of fresh spinach washed
  • 1/2 cup (125 mL) butter
  • 1 onion chopped
  • 1 1/2 lbs (675 g) ground lamb
  • 2 tbsp (30 mL) fresh rosemary chopped
  • 1 garlic clove finely chopped
  • 1/3 cup (80 mL) chicken broth or 1/3 cup (80 mL) 35 % cream
  • 2 tbsp fresh chive chopped
  • 2 sweet potatoes boiled, peeled and sliced into 1/4 inch rounds
  • 8 oz (250 g) Sharp Canadian Cheddar or Canadian Miranda or Old Canadian Swiss cheese grated
  • Salt and pepper to taste

Preparation

Pre-heat oven to 350 °F (180 °C).

Cook celeriac and potatoes in boiling salted water for 20 to 35 minutes.

Sauté spinach in some of the butter. Set aside.

In a hot skillet, sweat the onions with 2 tbsp (30 mL) of butter. Add lamb, garlic and rosemary and cook for 5 to 8 minutes. Add stock and let reduce. Set aside.

Drain the potatoes and celeriac. Mash to a purée with 3 tbsp (45 mL) of the butter, the cream and the chives. Add salt and pepper to taste.

Pour meat mixture into an ovenproof dish and spread over spinach evenly. Add a layer of the potato/celeriac purée and top with sweet potato rounds.

Sprinkle Sharp Canadian Cheddar cheese over the top and place in oven. Cook for 30 minutes or until cheese is nicely browned. Serve hot.
