Shrimp and Avocado Canapés with Feta

Ingredients

  • Feta Guacamole
  • 1 ripe avocado
  • 1/4 cup (60 mL) Canadian Feta crumbled
  • 1 minced garlic clove
  • 1 green onion
  • lime zest
  • lime juice
  • A dash of Tabasco sauce
  • Salt and pepper to taste
  • Scoop-shaped corn chips
  • Northern shrimps
  • 1 diced tomato
  • 1 mango diced
  • Fresh coriander

Preparation

Feta Guacamole

In a bowl, mash an avocado with a fork. Add crumbled Canadian Feta, garlic and green onion. Add lime zest, lime juice, Tabasco sauce and salt and pepper to taste.

Place a spoonful of Feta Guacamole in scoop-shaped corn chips. Top each one with a shrimp, diced tomato, mango and a little more Feta. Sprinkle with fresh chopped coriander.

Serve immediately.

Tips

For a change of taste, try plain or flavoured Canadian Havarti, Gouda or Medium Cheddar.
