Stuffed Butternut Squash With Feta

Ingredients
- 1 Butternut squash
- 2/3 cup (150 g) Canadian feta, crumbled
- 1/2 cup (125 ml) Canadian cooking cream
- 1/2 cup (50 g) Canadian shredded cheese (such as mozzarella, gruyère, or parmesan)
- 2 tablespoons (30 ml) Canadian butter
- Salt and pepper, to taste
- Fresh herbs (like parsley or chives) for garnish

Preparation
Preheat the oven to 200°C (about 400°F)
Cut the butternut squash in half lengthwise and scoop out the seeds with a spoon. It's possible to slightly trim the base to stabilize the halves in the baking dish
In a bowl, mix the crumbled feta, cooking cream, shredded cheese, salt, and pepper. Spread the mixture inside the butternut squash halves, ensuring an even distribution of the filling
Place the stuffed butternut squash halves in a baking dish
Bake in the oven for about 40-50 minutes, or until the flesh of the butternut squash is tender
Remove from the oven and, if desired, garnish with chopped fresh herbs before serving
