This is the Summer Frozen Delight recipe.

- 12 1/2 oz (375 g) fresh raspberries
- 2/3 cup (160 mL) sugar
- 2 tbsp (30 mL) liquid honey
- 2 cups (500 mL) 35 % whipping cream
- 4 oz (125 g) pistachios or Macadamia nuts chopped
In blender or food processor, purée raspberries until smooth. Pour into bowl. Add sugar and honey. Mix well.
In other bowl, whip cream until stiff. Fold in raspberry mixture. Freeze for 1 hour. Remove from freezer and stir in 3/4 of nuts. Mix well and freeze for another 3 hours. Remove from freezer 15 minutes before serving.
Serve in dessert cups and top with remaining chopped nuts.
