Sweet and Sour Beef with Greens

Ingredients

  • 1 lb (450 g) flank steak or sirloin thinly sliced
  • 2 tbsp (30 mL) soy sauce
  • 2 tbsp (30 mL) sherry or orange juice
  • 1 tsp (5 mL) cornstarch
  • 1 cup (250 mL) Milk
  • 1/4 cup (60 mL) ketchup
  • 2 tbsp (30 mL) soy sauce
  • 2 tbsp (30 mL) vinegar or lemon juice
  • 2 tbsp (30 mL) brown sugar
  • 1/4 tsp (1 mL) hot pepper sauce
  • 3 tbsp (45 mL) cornstarch
  • 1/4 cup (60 mL) vegetable oil
  • 2 garlic cloves minced
  • 2 tbsp (30 mL) chopped fresh ginger root
  • 6 green onions chopped
  • 1 bunch broccoli trimmed and chopped
  • 1 green bell pepper sliced
  • 1 stalk celery sliced
  • 1 pkg fresh spinach trimmed and chopped, (approx 3/4 lb/340 g)

Preparation

Combine beef with soy sauce, sherry and cornstarch. Marinate 10 min.

Meanwhile, combine milk, ketchup, soy sauce, vinegar, brown sugar, hot pepper sauce and cornstarch. Reserve.

Heat 2 tbsp (30 mL) oil in a wok or non-stick skillet. Add beef. Cook 2 to 3 min until browned. Remove from pan.

Wipe pan clean. Return to heat. Add remaining 2 tbsp (30 mL) oil. Add garlic, ginger and green onions. Cook 30 seconds until fragrant. Add broccoli, green bell pepper and celery. Cook 3 to 4 min. Add spinach. Cook just until wilted. Add beef to vegetables in wok.

Stir reserved sauce. Add to pan. Cook until sauce comes to a boil and thickens. Serve with steamed rice or noodles.

Tips

If you're in a hurry, leave out the broccoli and spinach and use twice the quantity of green bell pepper and celery.
