Tortilla with Green Peppers and Sharp Cheddar

Ingredients
- Tortilla
- 1 tbsp (15 mL) olive oil
- 1 tbsp (15 mL) butter
- 1 small onion in thin slices
- 2 or 3 small green peppers seeded sliced very thinly
- 7 oz (200 g) cooked potatoes sliced very thinly
- 4 oz (120 g) sharp Canadian Cheddar or Canadian Provolone grated
- 6 eggs beaten
- Salt
- Freshly ground black pepper
- Fresh herbs
- Sauce
- 1 lb (450 g) ripe tomatoes seeded and chopped
- 1 green pepper seeded and finely chopped
- 2 cloves garlic crushed
- 3 tbsp (45 mL) fresh parsley chopped
- Juice of 1 lemon
- Salt
- Freshly ground pepper

Preparation
To make sauce, mix tomatoes, pepper, garlic, parsley and lemon juice. Season with salt and pepper and set aside in refrigerator.
In a frying pan, heat some olive oil and some butter and sauté onion and peppers for 5 minutes, stirring occasionally. Gently add potatoes and cook 5 more minutes until nicely browned.
Remove vegetables from pan with a slotted spatula and set aside, keeping warm. Wipe pan with kitchen paper and heat some more olive oil and butter. Put vegetables back in pan and sprinkle them with sharp Canadian Cheddar cheese.
Pour eggs over vegetables and cook over moderate heat until set. Cut omelette in slices, garnish with fresh herbs and serve with a green salad.
