Tricolour Salad with Empereur Cheese

This is the Tricolour Salad with Empereur Cheese recipe.

Ingredients

  • 5 oz (150 g) Canadian Empereur cheese* in thin slices
  • 4 large ripe tomatoes sliced (do not throw away juice)
  • 2 pinches coarse sea salt
  • 1 large avocado
  • 12 fresh basil leaves or fresh tarragon leaves or a few leaves of flat parsley
  • 1/4 cup (60 mL) virgin olive oil
  • Freshly ground black pepper to taste

Preparation

Place Canadian Empereur cheese slices and tomato slices on two plates.

Sprinkle tomatoes with a pinch of coarse sea salt; this will extract juice from tomatoes. Place in refrigerator for about 30 minutes.

Shortly before serving, cut avocado into slices or large dice.

To serve, arrange avocado on plates and sprinkle with basil, tarragon or flat parsley. Drizzle with olive oil and season with pepper. Serve at room temperature with crusty bread.

Tips

For a tastier salad, add a little balsamic vinegar and/or a few thin slices of red onion just before serving.
