Ingredients

  • 1 frozen deep-dish pastry crust
  • 1 tbsp (15 mL) Dijon mustard
  • 1 cup (250 mL) shredded Canadian Swiss cheese
  • 2 small leeks thinly sliced
  • 1 tbsp (15 mL) butter
  • 2 cups (500 mL) cooked cubed turkey
  • 3 eggs
  • 1 cup (250 mL) 35 % cream
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper

Preparation

Spread mustard onto bottom and sides of pastry crust. Sprinkle 1/4 cup (60 mL) of the Swiss cheese onto crust.

Cook leeks in butter for 3 to 4 min to soften. Combine leeks and turkey and spoon into crust.

Beat eggs, then add cream, salt and pepper, mixing well. Stir in remaining cheese. Pour over the turkey.

Bake at 400 °F (200 °C) for 15 min. Then reduce to 350° F (180° C) for 20 to 25 min or until flan is golden brown. Cool for 10 min before serving.
