Wild Strawberry Tart
This is the Wild Strawberry Tart recipe.

Ingredients
- 2 cups (500 mL) Graham cracker crumbs
- 1 tbsp (15 mL) brown sugar
- 1/3 cup (80 mL) butter melted
- 1 pkg (1/4 oz/7 g) unglavoured gelatin
- 3 tbsp (15 mL) water
- 8 oz (250 g) Canadian Cream cheese
- 1 cup (250 mL) icing sugar
- 2 tsp (10 mL) lemon juice
- 20 oz (600 g) homemade wild strawberry jam
- 1 cup (250 mL) whipping cream 35 %

Preparation
Butter a 9-inch (23 cm) cake pan.
Combine crumbs, brown sugar and melted butter. Press half this mixture in bottom of pan and set in refrigerator.
Mix Canadian Cream cheese, icing sugar and lemon juice separately.
Soak gelatine in boiling water, then stir into cream.
Blend cream and Canadian Cream cheese mixtures. Spread half of this over graham crust in pan. Carefully cover with wild strawberry jam. Add other half of mixture and sprinkle with rest of crumbs. Chill. Serve with vanilla or chocolate sauce.
