Ingredients

  • 1 small round Canadian Brie or Camembert (about 7 oz/200 g)
  • 1/4 cup (60 mL) sun-dried tomatoes in oil drained and chopped
  • 2 tbsp (30 mL) toasted pine nuts

Preparation

Preheat oven to 375 °F (190 °C). Line a rimmed baking sheet with parchment.

Cut top rind off Canadian Brie or Camembert cheese. Place remaining cheese on prepared baking sheet.

Combine sun-dried tomatoes and pine nuts in a bowl. Spoon over the cheese. Bake 10 to 12 minutes or until cheese begins to melt. Enjoy with whole-grain crackers or bread.
