Zaatar Beets with Whipped Feta

This bright and creamy whipped concoction is made with Canadian feta cheese and Canadian Greek yogurt— if you’ve already indulged into the whipped feta trend, get ready for this: compared to regular yogurt, Greek yogurt is thicker, adding another layer of creaminess to the whipped feta dip.

Zaatar Beets with Whipped Feta

Ingredients

  • 3 large red beets
  • 5 ml (1 tsp) salt
  • 5 ml (1 tsp) pepper
  • 10 ml (2 tsp) olive oil
  • 15 ml (1 tbsp) zaatar
  • Whipped Feta
  • 225 g (8 oz) Canadian Feta cheese
  • 60 ml (¼ cup) Canadian Greek yogurt
  • Zest of a lemon
  • 5 ml (1 tsp) lemon juice
  • 15 ml (1 tbsp) water

Preparation

Preheat oven to 450 ºF (230 ºC).

Remove stems and cut beets in half—season with salt, pepper, zaatar, and olive oil. Wrap in foil and bake for 1 hour.

In a food processor, mix together feta, yogurt, lemon zest, lemon juice, and water. Blend until smooth.

Once beets are cooked, slice and toss with more zaatar and lemon juice.

Smear whipped feta on a plate and top with beets—season with salt, lemon juice, and mint.
