Gourmet Grilled Salmon Salad Sandwich

Ingredients
- 4 salmon fillets each about 6 oz (180 g)
- 1/4 cup (60 mL) bottled garlic honey BBQ sauce
- 1 tbsp (15 mL) lime juice
- 1 tbsp (15 mL) butter melted
- 2 tsp (10 mL) ginger freshly grated
- 2 tsp (10 mL) fresh coriander chopped
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) ground pepper
- 4 crusty rolls or panini halved and toasted
- Lettuce of your choice
- Thinly sliced yellow or red tomato
- Spread
- 3 tbsp (45 mL) mayonnaise
- 1 tbsp (15 mL) lime juice
- 1/4 tsp (1 mL) hot pepper sauce

Preparation
Preheat grill to medium then line with non-stick grill foil.
Blend garlic sauce with lime juice, butter, ginger and coriander. Brush over salmon fillets and sprinkle with salt and pepper.
Place fish on grill, close lid and cook, without turning, for 12 to 15 minutes or until just slightly coral in the centre.
Spread:
Blend the mayonnaise with the lime juice and hot pepper sauce. Spread over each roll and top with lettuce and tomato. Discard skin and break fish into chunks. Distribute salmon among rolls.
