Grilled Tilapia Fillets with a Cheesy Crust

Ingredients
- 4 garlic cloves finely chopped
- 2 shallots finely chopped
- 2 tbsp (30 mL) butter
- 2 tbsp (30 mL) olive oil
- 1 can (28 oz/796 mL) diced tomatoes drained
- 1 tbsp (15 mL) dried oregano
- 1/4 cup (60 mL) Italian bread crumbs
- 1/4 cup (60 mL) freshly grated Canadian Parmesan
- 1 egg lightly beaten
- 4 tilapia fillets about 5 oz (150 g) each*
- Salt and freshly ground pepper to taste

Preparation
Sauté garlic and onions in half the butter and oil until golden about 5 min. Season to taste. Add tomatoes and oregano. Cook for about 15 minutes over low heat.
Meanwhile, mix breadcrumbs, Parmesan cheese, salt and pepper on a flat plate. Dip the tilapia first in the egg and then roll in the breadcrumb mixture. Melt remaining butter with the oil and grill tilapia at a high heat for 3 minutes per side. Serve on the tomato and oregano sauce.

* African of origin, this fish can survive in both salt and fresh water. It can be cooked in many different ways: poached, braised, roast, grilled, fried or in the microwave. Its flesh stays firm and fillets are sold without bones.
