Prosciutto spirals with Mascarpone

Ingredients
- 16 slices prosciutto
- 1 cup (250 mL) Canadian Mascarpone cheese
- 4 fresh figs quartered
- 16 leaves fresh basil
- 1/3 cup (80 mL) (reduced to 2 tbsp/30 mL) balsamic vinegar
- Tender fresh herb shoots to garnish

Preparation
Place 4 prosciutto slices on a sheet of plastic wrap, overlapping them by about 1.5 cm.
Thinly spread Canadian Mascarpone cheese over the prosciutto to cover 3/4 of the surface. Place 4 basil leaves and a fig cut into quarters on the prosciutto. Roll tightly with plastic wrap taking care not to roll the plastic, then cut into 2 cm bites. Remove plastic wrap.
Decorate with herbs and drizzle with a few drops of reduced balsamic vinegar.
