Turkey Cabbage Rolls with Zucchini

Ingredients
- 12 cabbage leaves
- 2 tbsp (30 mL) butter
- 2 zucchini chopped
- 2 garlic cloves finely chopped
- Salt and pepper to taste
- Dried thyme
- A dash of hot sauce
- 1 cup (250 mL) Canadian Cottage cheese
- 1 cup (250 mL) grated Canadian Cheddar cheese
- 2 cups (500 mL) diced cooked turkey
- 3 cups (750 mL) tomato sauce
- Canadian Parmesan cheese

Preparation
Preheat oven to 375 °F (190 °C).
In saucepan of boiling water, cook cabbage leaves, 4 at time, for 4 minutes. Drain and set aside.
In skillet, sauté zucchini and garlic in butter for 3 minutes. Season to taste with salt, pepper, thyme and hot sauce. Remove from heat, add Canadian Cottage cheese, Canadian Cheddar cheese and turkey. Mix gently. Let stand, covered.
Place cabbage leaves on a work surface. Divide meat mixture among leaves and form in a cylinder shape. Fold leaf ends over mixture and roll up. Pour tomato sauce in ovenproof dish and place rolls in dish, seam side down. Bake for 25 minutes.
Serve two to three rolls per person over tomato sauce. Sprinkle with freshly grated Canadian Parmesan cheese. Serve with rice and steamed green vegetables.
