Millet and Yogurt Patties
This is the Millet and Yogurt Patties recipe.

Ingredients
- 1 chopped onion
- 1 finely chopped garlic clove
- 1 tsp (5 mL) Italian seasonings
- 1 tbsp (15 mL) olive oil
- 3/4 cup (180 mL) millet
- 1 1/2 cup (125 mL) water
- 2 tbsp (30 mL) tomato paste
- 1 tsp (5 mL) dried mustard
- 1 tsp (5 mL) instant chicken broth mix
- 4 oz (125 g) Canadian Canadian-Swiss cheese grated
- 1 egg
- Salt and pepper to taste
- A pinch of Cayenne pepper
- 2 eggs beaten
- 1 cup (250 mL) breadcrumbs
- Vegetable oil
- Yogurt Sauce
- 1 cup (250 mL) plain yogurt
- 1 finely chopped garlic clove
- 2 tbsp (30 mL) chopped fresh parsley
- 1/2 tsp (2 mL) paprika
- Juice of 1/2 lemon
- Salt and pepper to taste

Preparation
In skillet, sauté onion, garlic and herbs in oil and set aside.
In saucepan, combine millet and water and bring to boil. Reduce heat and simmer, stirring, until mixture thickens, about 20 minutes.
Transfer into large bowl and let cool. Stir in onion mixture. Add tomato paste, mustard, broth, Canadian Canadian-Swiss cheese and egg. Mix well and season to taste with salt, pepper and a pinch of Cayenne pepper. Form into 12 even patties (add breadcrumbs if mixture is not thick enough). Dip each patty in beaten eggs and coat with breadcrumbs.
Sauté in very hot skillet for 5 minutes on each side. Serve with chicory salad and Yogurt Sauce.
Yogurt Sauce:
In bowl, mix all ingredients and season to taste with salt and pepper.
