Ingredients
- 1 Yukon Gold potato
- 1/2 tsp (2 mL) butter
- 2 oz (60 g) Canadian Swiss cheese
- Red, white, green and black peppercorns mixed
- Caraway seeds (optional)

Preparation
Preheat oven to 400 °F (200 °C).
Scrub potato well. Dry. Prick with fork once or twice on each side. Rub all over with butter. Bake on rack in hot oven for 20 minutes. Turn potato over and bake another 20 minutes.
Cut baked potato in half, place a slab of Canadian Swiss cheese on each half and sprinkle on peppercorns and caraway seeds, to taste. Broil halves till cheese melts and bubbles.
Serve with rock salt if desired.
