Crêpes Suzette

Ingredients
- Sweet Crêpes
- 1/2 cup (125 mL) all-purpose flour
- 1 tbsp (15 mL) sugar
- 1 tsp (5 mL) baking powder
- 1 pinch of salt
- 1 cup (250 mL) hot Milk
- 1 egg
- 1 tbsp (15 mL) softened butter
- Grand Marnier Sauce
- 3 tbsp (45 mL) softened butter
- 3 tbsp (45 mL) sugar
- 4 tbsp (60 mL) Curaçao
- 1/3 cup (80 mL) Grand Marnier
- 1/3 cup (80 mL) orange juice

Preparation
Sweet Crêpes:
Sift flour together with sugar, baking powder and salt. Stir in hot milk gradually. With electric mixer, beat in egg and butter.
In well buttered skillet, pour a small amount of batter at a time. For thin crêpes, tilt skillet immediately so that batter will spread over entire bottom of skillet. Brown on each side. Remove from heat and fold in four.
Grand Marnier Sauce:
In skillet, brown sugar in butter. Stir in Curaçao, half the Grand Marnier and orange juice.
Return crepes to skillet and warm over low heat. Add remainder of Grand Marnier and ignite. Serve immediately, coating each crêpe with sauce.
