Miranda Cheese Sandwich

- 1 loaf olive bread or 4 Italian bread rolls
- Butter for spreading
- 4 to 8 radicchio leaves
- 4 to 8 slices Canadian Miranda cheese
- 4 to 8 slices Capicollo (medium or mild)
- 2 large Italian tomatoes sliced
- Fresh basil
- Freshly ground pepper to taste

Preparation
Cut olive bread in slices or bread rolls lengthwise. Spread with butter. Alternate radicchio leaves, cheese slices, Capicollo and tomato slices. Top with basil leaves. Season with a few twists of the pepper mill.

Serve with a Moretti beer.
