Artichokes à La Trappe

Ingredients
- 8 medium sized artichokes or 4 large artichokes
- Juice and zest of 1 lemon
- 1/2 cup (125 mL) white bread crumbs
- 2 cloves garlic crushed
- 1 tbsp (15 mL) fresh mint leaves minced
- 1 tbsp (15 mL) fresh coriander
- 4 oz (120 g) grated Canadian La Trappe cheese
- 1/2 cup (125 mL) melted butter
- 4 oz (100 g) Canadian Feta cheese
- 2/3 cup (160 mL) dry white wine
- of salt
- Freshly ground pepper to taste

Preparation
Trim artichoke leaves until you reach the tender green ones. Rub artichokes with lemon juice to avoid discoloration. Cut off top third of each artichoke. Using a tea spoon, carefully remove the fuzzy choke inside. Place artichokes in a large bowl containing water with a little lemon juice.
In another bowl, mix Canadian La Trappe cheese, lemon zests, bread crumbs, garlic, mint leaves, coriander and half the butter. Season with salt and pepper.
Drain and dry artichokes then stuff with cheese mixture. Top with Canadian Feta cheese. Place artichokes in a gratin dish and pour wine over them. Add remaining butter and pour in water up to half the height of artichokes.
Cook in oven at 350 °F (180 °C) for 35 minutes; baste often to tenderize. At the end of cooking time, broil for a few minutes in order to brown topping.
