Pork Meatballs and Creamer Potatoes Stew
Just because Christmas dinner gets all the attention doesn’t mean we don’t want to eat delicious meals all holiday season. A simple stew is exactly what we need on those cold days, when we don’t want to fuss too much in the kitchen but gathering over a wholesome and hearty dish with our loved ones feels just right. Call this a day-after-Christmas recipe!
This Pork Meatballs and Creamy Potatoes hits all the notes: savoury and comforting, with lovely textures, without bargaining on the taste. The homemade pork meatballs recipe is quick and easy to make (especially if you have sous-chefs!), and the flavour of the small creamy potatoes shines at its best in this easy recipe. But what pushes this stew recipe to the next level is the addition of Canadian evaporated milk that adds just the right touch of creaminess.

Preparation
Preheat the oven to 450 °F (230 °C).
In a bowl, combine all the ingredients for the meatballs and form about 22 meatballs, each around 3 tbsp.
Spread them on a parchment-lined baking sheet and bake for 15 minutes, or until done. Turn the meatballs halfway through cooking.
In a large saucepan over medium heat, melt the butter. Add the carrots, celery stalks and creamer potatoes. Cook for 5 minutes.
Add the flour and mix well, then add the remaining sauce ingredients and bring to a boil while stirring.
Reduce heat to medium-low, cover and simmer for 10-15 minutes or until the potatoes are cooked.
Add the meatballs, cook for another 5 minutes and serve.
