Honey Butter Cornbread
Homemade honey butter cornbread is the perfect addition to your dinner spread! Top off this delicious, fluffy buttermilk side dish with real butter and honey for a sweet and salty taste.

Ingredients
- ½ cup (125 ml) (1 stick) Canadian butter, melted, plus 1 tbsp (15ml) for greasing the baking pan or dish
- 1 cup (250 ml) all-purpose flour
- 1 cup (250 ml) yellow cornmeal
- 1 tbsp (15 ml) granulated sugar
- 2 tsp (10 ml) baking powder (optional: yields a fluffier cornbread)
- ½ tsp (5 ml) baking soda
- ½ tsp (5 ml) salt
- 1 ½ cups (375 ml) well-shaken Canadian buttermilk
- 2 large eggs
- Top with:
- ¼ cup (60 ml) melted Canadian butter (for drizzling after baking)
- 2 tbsp (30 ml) honey (for drizzling after baking)

Preparation
Preheat your oven to 400°F. Lightly grease an 8x8 baking pan or dish with 1 tbsp of butter, and place the pan or dish in the oven to heat up.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder (if using), baking soda, and salt.
Create a well in the center and pour in the buttermilk and eggs. Mix thoroughly to combine, and then add the slightly cooled melted butter. Mix again until just combined, being careful not to overmix.
Using oven mitts, carefully remove the hot pan or dish from the oven and pour the batter into it. Listen for the sizzle—that's what you want.
Bake until the cornbread starts to brown on top and a toothpick inserted in the center comes out clean (around 20-23 minutes).
While the cornbread is baking, combine the melted butter and honey in a small bowl.
Once the cornbread is baked, gently poke the top with a fork all over. Pour the honey-butter mixture over the cornbread, allowing it to soak in for extra moisture. Let the cornbread sit for 5 minutes before slicing and serving.
Slice the cornbread, serve immediately and enjoy!
