Cassava Cake

There’s nothing like the taste of “home” during those first few weeks back to school. So, here’s an easy Back to School Recipe for Filipino Cassava Cake!

CASSAVA CAKE

Ingredients

  • 2 packages (354 g each) of frozen grated cassava
  • 2 packages (354 g each) of frozen coconut milk
  • 2 eggs
  • 1 can (300 ml) of Canadian condensed milk
  • 1 can (354 ml) of evaporated Canadian milk
  • 1 jar (340 g) of young coconut strings

Preparation

Thaw and combine 2 packages of frozen grated cassava and coconut milk (you can find them at any Asian Grocery Store)

Add 2 eggs, one cup of Canadian condensed milk and mix until smooth

Pour into shallow baking pan and bake at 375 C for 45 minutes

While the cake bakes, you can start on the coconut topping by combining one can of evaporated Canadian milk with a half jar of young coconut strings

Mix these toppings together and pour it on the cake after it’s done the 45 minutes and put back into the oven for about 15 more minutes

Let the cake cool. Serve warm / at room temperature or refrigerate for later use
