Gingerbread Latte Tiramisu
Luxurious, creamy Canadian Mascarpone cheese, spiked with coffee and sweet spices, and fluffy whipped cream layered with ginger cookies add a festive twist to tiramisu. Like dressing it up for the holidays! Clear, individual coffee cups make for a fun presentation.

Ingredients
- 1/2 cup (125 mL) packed brown sugar
- 1/2 tsp (2 mL) ground ginger
- 1/4 tsp (1 mL) ground cinnamon
- Pinch ground cloves or nutmeg
- 1/2 cup (125 mL) brewed espresso or strong coffee
- 1 cup (250 mL) Canadian Mascarpone cheese
- 1 tbsp (15 mL) packed brown sugar
- 1 tsp (5 mL) cornstarch
- 1 cup (250 mL) Canadian 35% whipping cream
- 1 tsp (5 mL) vanilla extract
- 1 cup (250 mL) coarsely crumbled gingersnap cookies
- Ground cinnamon

Preparation
In a small saucepan, combine ½ cup (125 ml) brown sugar, ginger, cinnamon, cloves and coffee. Bring just to a simmer over medium-low heat, stirring until sugar is dissolved. Let cool to room temperature.
In a small bowl, mash mascarpone cheese until smooth, then whisk in half of the espresso mixture until blended.
In a chilled medium bowl, combine 1 tbsp (15 ml) brown sugar and cornstarch. Add cream and whip to soft peaks. Beat in vanilla until firm peaks form.
Divide half of the cookie crumbs among 6 clear coffee cups, jars or bowls; drizzle with about half of the remaining coffee mixture, dividing equally. Spoon in half of the mascarpone mixture, then half of the whipped cream, dividing equally. Repeat layers. Cover loosely and refrigerate for at least 4 hours, until chilled and flavours are blended, or for up to 1 day.
Just before serving, sprinkle tops lightly with cinnamon.
Tips
Replace the brewed espresso or strong coffee with 2 tbsp (30 ml) instant coffee granules and ½ cup (125 ml) water.
You can use store-bought gingersnaps or homemade cookies using the recipe here or your favourite recipe. You’ll need about sixteen 1½ inch (3.5 cm) cookies, or about 3 oz (90 g), to make 1 cup (250 ml) coarse crumbs.
Instead of individual servings, you can assemble the tiramisu in one large clear serving bowl or dish, then spoon out portions into individual dishes to serve.
