Alsatian Rabbit Casserole

Ingredients
- 3 lb (1.5 Kgs) 1 rabbit
- 1 1/2 cups (375 mL) Alsace white wine
- 3 garlic cloves finely chopped
- 3 tbsp (45 mL) butter
- Salt and pepper to taste
- 1/2 cup (125 mL) vegetable broth
- 4 carrots cut in half
- 2 onions in wedges
- 4 large potatoes in wedges

Preparation
Preheat oven to 350 °F (180 °C).
Cut rabbit into a dozen pieces. Prick meat with fork in a few spots and place in large dish. Add white wine and garlic. Mix well. Cover and marinate refrigerated for 2 hours.
In large skillet, brown rabbit pieces in butter for 3 minutes on each side. Season to taste with salt and pepper. Stir in remaining marinade and simmer until reduced to half. Stir in broth and turn heat off. Cover and let stand for 10 minutes. Place rabbit pieces in oval ovenproof dish and arrange carrots, onions and potatoes around meat.
Cover and cook in oven for 40 minutes. Serve immediately with vegetables and cooking juices.
