This is the Antipasto recipe.

Ingredients

  • 15 slices of mortadella rolled up
  • 1 cup (250 mL) choice of marinated olives
  • 1 cup (250 mL) marinated bell peppers
  • 1/2 cup (125 mL) sun-dried tomatoes preserved in oil
  • 12 slices of prosciutto rolled up
  • 1 1/2 cups (375 mL) marinated octopus chunks
  • 12 sardines in tomato sauce
  • 1 cup (250 mL) marinated artichoke hearts
  • 6 fresh ripe figs cut in 4
  • Drained capers
  • of Canadian Parmesan cheese
  • Anchovy fillets in oil
  • Choice of marinated vegetables
  • Freshly ground pepper
  • Lemon segments
  • of crusty bread

Preparation

In large serving platter, arrange all ingredients. Season to taste with pepper.
