Apple and Blue Ermite Cheese Pasta

Ingredients
- 1 lb (450 g) penne
- Olive oil
- Salt and pepper to taste
- 4 chopped green onions
- 2 apples peeled, trimmed and diced
- 4 oz (125 g) soft Canadian Blue Ermite cheese crumbled
- 1/4 cup (60 mL) coarsely chopped walnuts

Preparation
Cook penne according to cooking instructions on package, until al dente. Drain and return to saucepan. Sprinkle with olive oil and season with salt and pepper. Mix well. Stir in remaining ingredients.
Cover and let stand for 5 minutes before serving. Serve with legume salad.
