Apple and Honey Muffins

This is the Apple and Honey Muffins recipe.

Ingredients

  • 2 cups (500 mL) all-purpose flour
  • 4 tbsp (60 mL) rolled oats
  • 1 tsp (5 mL) baking soda
  • 1/2 tsp (2 mL) ground cinnamon
  • of grated nutmeg
  • of salt
  • 3 eggs
  • 1 cup (250 mL) apple juice
  • 3 tbsp (45 mL) apple jelly
  • 1/2 cup (125 mL) buttermilk*
  • 1/4 cup (60 mL) liquid honey
  • 1 1/3 cup (330 mL) cubed peeled apples

Preparation

Preheat oven to 375 °F (190 °C).

In bowl, combine flour, rolled oats, baking soda and spices. Set aside. In large bowl, beat together eggs, apple juice, apple jelly, buttermilk and honey.

Gradually stir in dry ingredients into egg mixture. Stir just enough to moisten, being careful not to overmix. Add apple cubes and delicately stir. Spoon batter into buttered muffin cups, filling each 2/3 full. Top with apple slice, if desired. Bake for 25 to 30 minutes or until toothpick inserted in centre comes out clean. Let cool for 10 minutes before removing from cups. Serve.

Tips

*To make buttermilk, combine 1 tbsp (15 mL) of white vinegar with milk.
