Arugula Salad with Pan-Fried Apples and Cheese

Ingredients
- Vinaigrette
- 1 small shallot finely chopped
- 1 tbsp (15 mL) maple syrup
- 2 tbsp (30 mL) apple cider vinegar
- 1/3 cup (80 mL) sunflower oil
- 7 oz (210 g) Canadian Victor et Berthold* cheese
- 2 tbsp (30 mL) butter
- 2 Cortland apples or Golden Delicious apples peeled, cored and cut into 8
- 12 oz (350 g) arugula stalks removed and washed or baby spinach
- Salt and freshly ground pepper to taste

Preparation
Vinaigrette:
Mix shallot, maple syrup, vinegar and season. Incorporate oil using a whisk or a fork. Set aside.
Salad:
Remove cheese rind, cut cheese into dice and set aside. In a frying pan, heat butter over a medium heat and brown apples for 5 minutes, turn and continue cooking for another 3 minutes. Remove from pan and set aside.
Mix arugula (or spinach), apples, cheese, vinaigrette and season. Serve immediately.
