Avocado, Spinach and Mi-Carême Salad

Ingredients
- 12 oz (360 g) tender spinach leaves
- 3 oz (90 g) small white mushrooms sliced
- 2 hard-boiled eggs chopped
- 2 oz (60 g) Canadian Mi-Carême cheese diced
- 1 clove garlic minced
- 2/3 cup (160 mL) sour cream
- Juice of one lemon
- 1 avocado
- 12 slices baguette bread toasted
- 2 oz (60 g) pumpkin seeds roasted
- Salt and freshly ground pepper to taste
- Dijon mustard

Preparation
Place spinach, mushrooms, hard-boiled eggs and Canadian Mi-Carême cheese in a salad bowl.
In other bowl, mix garlic, mustard, sour cream and lemon juice. Pour dressing over salad, season with salt and pepper and toss gently.
Peel, core and dice avocado. Place salad on four plates and top with avocado. Sprinkle with pumpkin seeds and serve immediately with baguette toasts.
