Ingredients

  • 2 lb (1 Kg) salmon fillet skinned
  • 1 cup (250 mL) 35 % cream
  • 2 tbsp (30 mL) butter
  • 2 egg yolks
  • 1 tbsp (15 mL) lemon juice
  • 1 tbsp (15 mL) white wine vinegar
  • 1/2 cup (125 mL) fresh coriander finely chopped
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1/4 tsp (1 mL) ground mace
  • Fresh dill

Preparation

Cut fillet into 6 pieces. Wrap in foil and place on a baking sheet. Bake at 425 °F (220 °C) for 10 to 12 min or until salmon is just cooked. Meanwhile, heat cream and butter in saucepan until butter melts. Add egg yolks and stir frequently until sauce comes to a boil.

Add remaining ingredients except dill; simmer for 5 min. Season to taste and pour over fish. Garnish with dill.
