Basil and Canadian-Swiss Chicken Paupiettes

Ingredients
- 8 chicken cutlets
- Salt and pepper to taste
- A few dashes of lime juice
- Fresh basil leaves
- 1 1/2 cups (375 mL) grated Canadian Canadian-Swiss cheese

Preparation
Generously salt and pepper only one side of chicken cutlets. Drizzle with lime juice. Top cutlets with basil leaves and garnish centre, lengthwise, with Canadian Canadian-Swiss cheese. Roll up cutlets to form paupiettes and secure with toothpick, or thin string, previously soaked in water for 30 minutes.
On buttered grill, cook paupiettes on barbecue over medium heat for 20 minutes, turning frequently. Remove from grill and serve two paupiettes per person. Serve with saffron rice.
