Beef Enchiladas (Enchiladas de ocotzingo)

Ingredients

  • 8 to 12 tortillas
  • Vegetable oil
  • Red pepper sauce or spicy salsa
  • 1 2/3 lb (750 g) cooked and drained ground beef
  • 1 lb (450 g) Canadian Old Cheddar cheese grated
  • 1 onion finely chopped

Preparation

Preheat oven to 325 °F (160 °C).

Brush inside of each tortilla with red pepper sauce and spread with ground beef. Top with grated Cheddar cheese and some chopped onion. Roll up and place in buttered baking pan (edges facing bottom).

Bake for 15 minutes. You can also top with any type of salsa and grated cheese. Remove from oven and serve with sour cream, guacamole and refried black beans.
