Blue Cheese and Poppy Seed Bites

Ingredients

  • 3 cups (750 mL) cooked rice
  • 1 tbsp (15 mL) poppy seeds
  • 1/4 cup (60 mL) unbleached flour
  • 2 eggs beaten
  • 1 1/3 cup (330 mL) Canadian Bleu Bénédictin* cheese crumbled
  • 1/3 cup (80 mL) sour cream or plain yogurt
  • Salt and pepper to taste
  • Butter
  • Olive oil
  • Pieces of fruits

Preparation

Put all ingredients in a mixing bowl, except butter, oil and fruit. Season with salt and pepper to taste. Using a fork, mix into a moderately firm and smooth paste.

Over medium heat in a large non-stick frying pan, heat a little butter and oil. Place tablespoonfuls (15 mL) of paste in pan, keeping them well separated. Slightly flatten with a spatula.

Cook for a few minutes on each side until crunchy. Remove and place on paper towels to absorb excess fat. Repeat until all paste is cooked.

Sprinkle with poppy seeds and serve right away, with pieces of fruits and, if desired, with a creamy sauce.

Tips

*Change the taste of this dish by using Canadian Blue Ermite cheese.
