Feta Watermelon Salad

Tangy lemon, aromatic basil, and creamy feta are the perfect combination to elevate your summer salads. You're going to love this delicious and refreshing Feta Watermelon salad!

Ingredients

  • Dressing
  • 2 tbsp (30 ml) extra-virgin olive oil
  • 2 tbsp (30 ml) lemon juice
  • 1 tbsp (15 ml) shallot, chopped
  • 1 tbsp (15 ml) lemon zest
  • 1 tbsp (15 ml) fresh basil, chopped
  • ¼ teaspoon (1 ml) sea salt
  • Salad
  • 5 cups (1.25 L) watermelon, rind removed and cubed
  • ¼ cup (60 ml) red onions, thinly sliced
  • ¼ of a cucumber, thinly sliced
  • ⅓ cup (80 ml) Canadian feta cheese, crumbled
  • ⅓ cup (80 ml) mint, torn
  • 2 tbsp (30 ml) jalapenos, seeded and deveined (optional)
  • Sea salt, to taste

Preparation

In a large salad bowl, whisk together the olive oil, lemon juice, shallot, lemon zest, basil and salt.

Add the watermelon, red onions, cucumber, feta, mint and jalapenos to the salad bowl and toss. Season to taste and serve.

Tips

  • Taste your mint before adding, depending on the variety and the time of year it can be very strong or very mild. Adjust amount used accordingly and to taste.
