Bocconcini en papillote

Ingredients

  • 2 potatoes
  • 2 Canadian Bocconcini sliced
  • 1 green onion sliced
  • 4 slices of pancetta or bacon cooked, cut into strips
  • Salt and freshly ground pepper

Preparation

Preheat the barbecue to medium heat.

Make cuts lengthwise in the potatoes, then wrap each in aluminum foil. Cook on the grill for approximately 40–45 minutes or until tender.

Remove potatoes from the heat, open up foil and insert Bocconcini, green onion and pancetta into the cuts of each potato and season with salt and pepper.

Continue cooking for 5 minutes with foil spread open.

Serve as an accompaniment to your favourite grilled food.
