Bois-Francs Apples with St-Damase Cheese

Ingredients

  • 5 oz (150 g) Canadian St-Damase cheese without rind
  • 4 Golden Delicious apples (or another strong-skinned variety)
  • 8 slices of country bread
  • 1/3 cup (80 mL) butter
  • Juice of half of a lemon
  • Several sprigs fresh rosemary

Preparation

Preheat oven to 350 °F (180 °C).

Cut the Canadian St-Damase cheese into 4 equal portions. Cut apples in half and remove core. Sprinkle apples with lemon juice so they don't turn brown. Spread each one with a knob of butter.

Place the bread slices in a buttered ovenproof dish, then top with apple halves. Bake for 15 minutes.

Remove dish from oven and top each apple half with a piece of Canadian St-Damase cheese. Sprinkle with rosemary. As soon as the cheese has melted, serve warm with croutons.

Tips

Instead of Golden Delicious apples, choose strong-skinned apples so that they do not collapse when baked.
