Braised Pork Loin Chops with Green Flageolet Beans

Ingredients
- 3 tbsp (45 mL) unsalted butter
- 2 boneless loin chops 2 inch (5 cm) thick
- 2 onions sliced
- 1 bottle of beer
- Salt and pepper to taste
- 3 tbsp (45 mL) brown veal stock or beef broth
- 1 2/3 cups (410 mL) green flageolet* beans cooked
- 1/2 clove garlic minced
- Freshly ground black pepper to taste

Preparation
Melt butter in pan and cook pork chops for 1 to 2 minutes on each side. Remove pork chops and set aside.
In the same pan, sauté onion for 3 to 4 minutes, until tender. Place onions in ovenproof dish and add chops. Add beer, salt and pepper and bake in oven at 325 °F (160 °C) for 5 to 7 minutes. Remove chops and cover with aluminium foil to keep warm.
Deglaze cooking dish with veal stock or beef broth. Thicken over low heat, stirring constantly. Strain sauce.
Rinse beans in running water. Reheat beans in cooking dish with garlic, adding freshly ground pepper, for 3 to 4 minutes, over low heat.
Place beans in serving dish or individual plates. Split chops, butterfly-style, and place over beans. Coat with sauce.
Tips
* A variety of kidney bean. Flageolets are available dried or precooked.
