Broccoli Soup with Canadian Empereur Cheese

Ingredients
- 1 oz (30 g) butter
- 1 onion chopped
- 1 potato peeled and chopped
- 1 lb (450 g) broccoli florets chopped
- 4 cups (1 L) chicken broth
- 3 oz (90 g) Canadian Empereur or Migneron cheese or Victor et Berthold cheese diced
- A pinch of grated nutmeg
- Salt and freshly ground black pepper to taste
- Hazelnut oil or walnut oil

Preparation
In a saucepan with a lid, sauté onion and potato in butter 5 minutes. Add broccoli and cook 5 more minutes. Cover with chicken broth, bring to the boil, add salt and simmer 15 to 20 minutes.
Strain to separate broth from vegetables. Place vegetables in a blender, add a little broth, then puree until smooth. Without stopping blender, carefully add rest of broth.
Pour soup into saucepan, add nutmeg, bring to the boil and remove from heat. Add Canadian Empereur cheese and stir until melted. Check seasoning. Pour into warmed bowls and drizzle with a little hazelnut or walnut oil.
